Black Bean Stew with Lime, Cumin & Crispy Finish

Right, I know I just posted about not being ready to give up on summer. And I meant it. But also - the slow cooker is back out and I am very happy about it. This is the first recipe in my new slow-cooker series, running up to the launch of Slow-Cooked Vegan on 8th October. And it’s a really good one to start with. Black beans are absolutely made for the slow cooker - they hold their shape beautifully while soaking up all that smoky, spiced sauce, with some breaking down slightly to naturally thicken everything around them. Add a tiny bit of cocoa powder or instant coffee (I know, just trust me), finish with lime and chilli oil and pile on something properly crunchy on top - and you have one of those meals that makes the whole house smell incredible all day. Set it in the morning. Come home to this. That’s the dream. Turn cooking mode on

Step 1

Heat the olive oil in a large frying pan over a medium heat. Add the onion with a pinch of salt and cook for 10–12 minutes until soft, sweet and lightly caramelised. Don’t rush this - it’s where the flavour starts.
