Sticky Cherry Tomato, Aubergine & Tofu with Hummus

Deliciously gooey, sticky cherry tomato, aubergine & tofu stew on creamy hummus ! 🤩 This beautiful one pot is healthy and nutritious with the vibrant summer veg and butter beans. I added tofu for some delicious plant based protein - but you just add more butter beans/chickpeas. Dolloped on hummus, but this would be great with pasta/rice/bread etc. Here's the recipe!
