Ingredients: 2 tbsp Olive oil; 1 Large leek; 2 Carrots; 4 cloves Garlic; 1 tsp Ground cumin; 1 tsp Turmeric; 1 tsp Ground coriander; 1 tsp Smoked paprika; 2 Tomatoes; 3 Medium sweet potatoes; 1.1 litre Veg stock; 1 twist Black pepper; 1 tsp Sea salt; 2 tbsp Plant-based yogurt–I used oatly Greek style; 1 block Firm tofu; 1 tbsp Veg oil; 1 pinch Sea salt; 1 pinch Chilli flakes; 2-3 tbsp Toasted hazelnuts; 1 swirl Plant-based yogurt; Coriander

A lovely spiced sweet potato & carrot soup with crispy tofu & toasted hazelnuts. Perfectly cosy and packed full of spices and vegetables. With crispy tofu on top!
