Crispy Tofu with the Peanut Sauce!

I was looking through some old photos of my travels the other day - don't you think winter makes you dream of being transported somewhere hot and sunny? Spending time in Thailand was a total flavour explosion—vibrant street food, bold spices, and the perfect balance of sweet, salty, spicy, and tangy in every bite. Ok One of my favourite memories? Sitting at a street cafe, watching tofu skewers being grilled over an open flame and dunked into the most incredible peanut sauce. A little bit inspired by that —my crispy satay-style tofu, marinated in chilli, lime, and warming spices, & the creamiest nutty peanut sauce.

This was very tasty and I will make it again. I don’t have an air fryer so baked the tofu in the oven which made it a bit chewy. It would have been better to pan-fry as suggested in the recipe. Also there was quite a lot of marinading liquid left so I added that to the sauce. I put on all the toppings to serve and they definitely added to the flavour, colour and texture. The recipe says total time 25 mins but this is not accurate as it doesn’t take account of the marinading time for the tofu. I let it sit for an hour. But this recipe is definitely a keeper. Thank you.
