Cumin & Ras el Hanout Roast Carrots with Flatbreads, Herby Yogurt & Hazelnuts

This is one of those dishes that proves how good simple veg can be when you layer flavour properly. Sweet roasted carrots are tossed with warm cumin and ras el hanout, then piled onto soft flatbreads with a cool, herby yogurt and finished with a generous drizzle of crispy garlic chilli oil (the best bit, honestly). Add a sprinkle of toasted hazelnuts for crunch and you’ve got something that feels a bit special but is still really easy to throw together. It’s the kind of meal I come back to when I want something cosy but fresh - perfect for slower evenings or a laid-back weekend lunch.
