Ingredients: 200 g Self raising flour; 80 g Ground almonds; 1 tspn Baking powder; 4 tspn Ground ginger; 1 tspn Mixed spice; 1 tspn Ground cinnamon; 1 pinch Cloves; 100 g Light brown sugar; 1/2 tspn Sea salt; 135 g Grated parsnip; 150 ml Veg oil; 2 tbsp Treacle; 250 ml Plant-based milk milk; 6 tbsp Raisins; 50 g Icing sugar, sifted; 1/2 Juice of a lemon

A dreamy festive cake recipe. Lightly spiced, completely gooey and sweet and with a gorgeous lemon glaze.
