Sticky Chilli-Miso Fan Aubergines with Sesame Cream

Sticky, glossy, spicy and ridiculously good. These fan-cut aubergines are roasted until completely silky, then lacquered in a sweet-savoury chilli-miso glaze until caramelised around the edges. They’re piled onto cool, creamy sesame tahini and finished with chilli crisp, spring onions and sesame. The fan-cutting isn’t just for looks (although it does look gorgeous!) - all those little layers catch the sticky glaze, so you get maximum flavour in every bite. Big flavour, beautiful to serve, and exactly how I want to eat aubergine right now. 🍆
