Roast cabbage is such a favourite, the simple veg is totally transformed in the oven. Soft on the inside and caramelised on the edges. Served here on puy lentil stew. And chimichurri - esk coriander dressing is fresh & zingy and seriously so good! *You can swap the coriander for parsley/mint 🤩
