Sprout & Pea Bhajis

If you’re looking for another way to use up your leftover brussels sprouts this festive season, why not give my Spiced Sprout & Pea Bhajis a try? These crispy, golden bhajis are super simple to make, starting off by chopping up your red onion into strips and slicing your sprouts thinly before adding them to a bowl and mixing them together. Then add in some gram flour, spices, and salt before gradually adding water to the mixture and combining well with your hands. You can then either Pan or Air fry your mixture, ensuring you flip them halfway through for a consistent cook. They pair beautifully with this simple truffle mayo, mixing vegan mayonnaise, lemon juice, garlic & truffle oil together until smooth. Then all that’s left to do is enjoy!
