Ingredients: 1 tbsp Coconut oil; 1/4 White cabbage, shredded; 2 Carrot, julienned; 6 Spring onions, sliced; 3 cloves Garlic, sliced; 1 thumb Ginger, grated; 1 200g block Firm tofu, cut into medium sized cubes; 2 tbsp Toasted sesame oil; 2 tbsp Sriracha; 1 pinch Sea salt; 2 tbsp Sesame seeds; 1 tbsp Gochujoung or sriracha; 2 tbsp Tamari; 2 tbsp Peanut butter; 1/2 Lime juice; 2 tbsp Toasted sesame oil; 1/2 tsp Coconut sugar; 1 Garlic powder; 2 tsp Maple syrup; 60 g Buckwheat noodles; 1 handful Coriander; 1 handful Mint; 3 tbsp Toasted peanuts

This was very tasty and I will definitely make it again. I swapped the buckwheat noodles for wheat udon noodles, cut down on some of the oil and eased back on the sriracha but, otherwise, I followed the recipe. The mint leaves are a genius addition and added a lovely freshness to the dish. Thanks Nikki. Another winner 😊
