This was very tasty and I will definitely make it again. I swapped the buckwheat noodles for wheat udon noodles, cut down on some of the oil and eased back on the sriracha but, otherwise, I followed the recipe. The mint leaves are a genius addition and added a lovely freshness to the dish. Thanks Nikki. Another winner 😊
