Air Fryer Breakfast Bagel, Romesco, Smoked Tofu, Crispy Capers

Smoked tofu bagels aren’t new. This romesco sauce is what makes it so so good! I had two red peppers going soft in the fridge and needed to use them before they ended up in the bin, this is what happened, and I haven’t stopped thinking about it since. Charred in the air fryer until the skins blister and blacken, peeled, then blitzed with toasted almonds, garlic, smoked paprika and a splash of sherry vinegar. That’s romesco, rich, smoky, a little punchy from the vinegar, and honestly one of the easiest sauces you’ll ever make. I could eat it with a spoon. Layer it up with crispy air-fried smoked tofu, capers fried until golden, and a handful of peppery rocket, all piled onto a toasted bagel. Every element earns its place, smoky, crispy, punchy, fresh, all at once. This is proper weekend breakfast energy, and it’s part of air fryer week.

Method

Turn cooking mode on

Step 1

Char the peppers. Rub with the olive oil, then air fry whole at 195°C for 15-16 minutes, turning halfway, until the skins are blackened and blistered. Remove, place in a bowl covered with a plate or cling film for 10 minutes to steam. Peel and deseed.
