Chickpea Pilaki with Smoky Seed Crunch

If you’re craving something hearty, nourishing and full of flavour – this one’s for you. This Chickpea Pilaki is my take on the classic Turkish braised dish. It’s rich with tomatoes, garlic, and warming spices, balanced with sweet carrots and bright herbs. I love how it’s simple yet layered – perfect for batch cooking, meal prep or a cosy night in. To take it to the next level, I’ve added a Smoky Seed Crunch – savoury, crispy and just a little addictive. It adds that golden, nutty topping that makes every bite extra special. It’s a dish that shifts beautifully with the seasons: - Add peas or asparagus tips in spring - Stir through roast squash in autumn - Swirl in caramelised or burnt onion purée for a deep winter version Serve it warm or at room temp with crusty bread, flatbreads, or grains – and don’t forget the lemon squeeze.
