This Chickpea Pilaki is my take on the classic Turkish braised dish. It’s rich with tomatoes, garlic, and warming spices, balanced with sweet carrots and bright herbs. I love how it’s simple yet layered – perfect for batch cooking, meal prep or a cosy night in.
To take it to the next level, I’ve added a Smoky Seed Crunch – savoury, crispy and just a little addictive. It adds that golden, nutty topping that makes every bite extra special.
It’s a dish that shifts beautifully with the seasons:
- Add peas or asparagus tips in spring
- Stir through roast squash in autumn
- Swirl in caramelised or burnt onion purée for a deep winter version
Serve it warm or at room temp with crusty bread, flatbreads, or grains – and don’t forget the lemon squeeze.
