This one's an absolute weeknight winner. A silky, rich Thai coconut curry made with pantry and freezer staples - like my go-to frozen peas (AKA the ultimate freezer saviour) – and finished with a big handful of salted peanuts for crunch and richness. ⁣ It’s simple, cosy, and bursting with flavour - exactly what you want when time is short but your taste buds are still demanding something a little bit special.⁣ ✨ I’ve used Penang curry paste here for that deeper, slightly nutty flavour, but honestly - use whatever paste you love or have to hand: green, red, yellow - shop-bought or homemade, it’s all good.⁣ Best part? This is a one-pan wonder, so minimal washing up, maximum flavour. 🙌⁣
