Miso Aubergine with Sesame Noodles

This one’s a proper ode to the humble aubergine – roasted until golden and sticky in a bold miso glaze, then layered over silky sesame noodles with tamari, lime and just enough bite. It’s simple, satisfying, and proof that vegetables don’t need dressing up with much – just a good marinade, a hot oven, and the right textures to bring it all together. Serve it hot or cold.
