This was delicious - a lovely way to eat courgettes and cauliflower. I was a bit dubious about the salsa when I was making as it sounded a bit fierce but it turned out to be the perfect accompaniment. I will definitely be making this again. It was easy to do - though I don’t have an air fryer. I just prepared the courgettes first and put them in the oven at 180c for 20 minutes or so and put the cauliflower underneath so it was in the oven for about 35 minutes in total. I let the courgettes cool for 5 minutes or so before adding to the blender so the dip was still pleasantly warm on serving. Another great recipe. Thanks Nikki.
