Did you know you can cook flatbreads in an air fryer? Genuinely, no oven or pan needed. My easy yoghurt flatbreads turn out perfectly every time: just 4 minutes and they puff up beautifully, with that proper charred, blistered look you’d expect from a much fussier method. This one pairs them with lemony roasted cauliflower, whipped tahini, and a scatter of fresh dill, bright, nutty, a little smoky, and ready in 20 minutes start to finish. It’s one of those recipes that looks like it took way more effort than it did. If you’ve never tried air fryer bread before, this is the one to start with.

Bang Bang Tofu Flatbread
This is my Bang Bang Tofu Flatbread. Crispiest tofu (air fried is the way to go), a peanutty, spicy sauce, fluffy flatbreads, creamy sriracha mayo, and lots of crunchy greens. Once the tofu is air fried to crispy perfection, it gets tossed in a satay-style bang bang sauce until every piece is coated. Every good flatbread needs a creamy, spicy base - so I went in with a quick sriracha mayo, then layered everything up with fresh crunch and sesame seeds. Chimichurri Loaded Sweet Potato Fries from The Vegan Air fryer
Crispy sweet potato fries, loaded with a herby, tangy chimichurri that cuts straight through the sweetness, that contrast is really what makes this one. The fries come out properly crisp in the air fryer, no soggy middles, and the chimichurri adds exactly the sharp, garlicky freshness they need. Completely more-ish, genuinely hard to stop eating, and perfect for parties, sharing, or just a healthier snack when you want something substantial. Sweet, sharp, herby, crispy, all in one bite. Tip: don’t limit the chimichurri to just this, it’s brilliant spooned over almost any roast veg, or stirred through a fresh tomato salad.

Crusted Tofu with Peas & Chips from The Vegan Air Fryer
A take on ‘fish & chips’ - properly fun to make, and a great one for the whole family. Marinating the tofu in soy and sriracha before it gets breaded is what makes this one, adding tons of flavour right through the middle rather than just on the crust. Not traditional, I know, but I genuinely think it works better this way. Crispy, golden, and served up with proper chips and a pea mash on the side, all the comfort of a chippy tea, done entirely in the air fryer.

Air Fryer Breakfast Bagel, Romesco, Smoked Tofu, Crispy Capers
Smoked tofu bagels aren’t new. This romesco sauce is what makes it so so good! I had two red peppers going soft in the fridge and needed to use them before they ended up in the bin, this is what happened, and I haven’t stopped thinking about it since. Charred in the air fryer until the skins blister and blacken, peeled, then blitzed with toasted almonds, garlic, smoked paprika and a splash of sherry vinegar. That’s romesco, rich, smoky, a little punchy from the vinegar, and honestly one of the easiest sauces you’ll ever make. I could eat it with a spoon. Layer it up with crispy air-fried smoked tofu, capers fried until golden, and a handful of peppery rocket, all piled onto a toasted bagel. Every element earns its place, smoky, crispy, punchy, fresh, all at once. This is proper weekend breakfast energy, and it’s part of air fryer week.

Roasted root veg, done in the air fryer until caramelised and tender, gives it enough weight to feel like a proper meal in autumn or winter, while the fresh greens and herbs keep it light enough for summer too. Butter beans and seeds add a good hit of plant-based protein, so it’s substantial without being heavy. Crispy jacket potatoes with a perfect crispy skin, fluffy centre, and homemade harissa beans piled on top, so simple, but genuinely so good. The air fryer gets that skin properly crackling in a fraction of the time an oven takes, while the inside stays soft and fluffy. The beans are the real star here, warm, spiced, a little smoky from the harissa, and rich enough to turn a simple jacket potato into a proper meal. Crispy Potato Salad with Creamy Mustard Dressing & Charred Greens
This is one of those recipes that sounds simple and then completely surprises you. Crispy golden potatoes - properly crispy, the kind that make a noise when you eat them - dressed while still warm in the most incredible wholegrain mustard dressing. The warmth is everything. It soaks in, softens slightly, and transforms the whole thing into something that tastes like it took far more effort than it did. Charred spring onions, loads of fresh dill, toasted hazelnuts for crunch. This is the potato salad that converts people who swear they don’t like potato salad. I’ve seen it happen multiple times. Masala Cauliflower, Potato & Pea Curry from The Vegan Air Fryer
The classic combination of cauliflower and potato curry, with a few delicious twists that take it up a level, roasting the veg in the air fryer first, rather than boiling or simmering it straight into the curry, adds tons of extra flavour and gives everything a bit of char and depth.
